Thank you to all who joined us August 18 for a one-of-a-kind evening of wine pairings and dinner with Chef Francisco Ruano!
What a magnificent evening for IXI’IM restaurant, our guests and culinary team!
The event was the first time Chef Francisco Ruano visited Ixi’im and join his culinary expertise with Chef Jorge Vallejo (Quintonil) and our Executive Chef Luis Ronzón.
The night was full of laughs, partnerships, knowledge, and of course amazing food and beverages.
“Chef Paco”, as the Ixi’im team calls him, had a wonderful time at our kitchen and with our team, sharing experiences, encouragement and sharing the same passion that has made him one of the top chefs in Mexico.
Everyone raved about the special eleven-course dinner and wine parings which featured unique creations by each Chef.
Our guests enjoyed the cuisine, while each chef went table-to-table describe the characteristics and ingredients in each dish. There was an exceptional mix of flavors, textures, smells and sensations, while getting to know more of our chefs.
Ruano’s signature dished of the evening were:
Pork ribs – Described as “the best one of the night” and a new, fresh way to enjoy pork.
Guaya´s Margarita: A refreshing starter for such a warm night.
Narrow´s jam oblea: Described as a unique and incredible sensation of flavors with the mix of burned sugar and milk with the bone marrow, creating a whole new culinary experience for the Mexican cuisine.
Vallejo´s main dishes:
Buttermilk sorbet: A wonderful and unexpected dessert for the night.
Fish BBQ with spicy grasshoppers: A full expression of Mexican gastronomy combining flavors from the south and center of the country.
Ronzón’s main dishes:
Avocado with cinnamon sorbet and homemade chocolate: An awesome twist to our traditional avocado hails with chocolate ganache made from scratch by the Ixi’im’s team.
